Creamy Chicken & Vegetables Over Biscuits

frozen biscuits, unbaked
1 lb chicken
1 tsp poultry seasoning
1/2 tsp onion powder
1/4 tsp celery salt
1/4 tsp fresh ground pepper
1 Tbsp vegetable oil
1/2 cup onion, finely chopped
1 stalk of celery, thin sliced
1 cup frozen mix vegetables
1 (10 3/4 oz) can cream of chicken soup
1 cup milk
1/4 cup parsley, finely chopped
1/4 cup parmesan cheese, grated


1. Bake biscuits according to package directions and keep warm.
2. Gently mix chicken, poultry seasoning, onion powder, celery salt, and pepper until well blended.
3. Heat oil in large skillet over medium-high heat. Add seasoned chicken, onion and celery. Cook about 10 minutes to break up the mixture, until chicken is no longer pink and is cooked thoroughly.
4. Stir in frozen vegetables, soup, and milk and bring to a boil. Reduce heat to low; simmer about 5-10 minutes, stirring occasionally until vegetables are heated through.
5. Stir in parsley and parmesan cheese.
6. Split warm biscuits in half and top with chicken mixture.
