Soup - Chicken Tortilla

2 Tbsp olive oil
1 cup red onion, diced
¾ cup celery, diced
½ cup green bell pepper, diced
1 ½ Tbsp garlic, minced
2 Tbsp chipotle sauce, or to taste
8 cups chicken stock
3 cups chicken, cooked, diced
2 (14 ½ oz) cans chopped tomatoes
¼ cup fresh lime juice
¼ cup fresh cilantro, minced
½ tsp ground cumin
Salt and pepper to taste


1. Heat oil in a large soup pot. Sauté onion, celery, bell pepper and garlic until the onion is clear.
2. Add all remaining ingredients and simmer for about 30 minutes.
3. Garnish with tortilla chips and grated Monterey jack cheese.
