Soup - Cheesy German Potato

6 cups chicken broth
6 cups potatoes, diced
1 cup carrots, chopped
1 cup celery, chopped, optional
1 cup onion, chopped
1 can cream of chicken soup
1 can cream of celery soup
½ lb Velveeta cheese
½ tsp pepper
¼ tsp garlic
2 Tbsp parsley, crushed
½ tsp basil


1. In a large pot, cook broth, chicken and vegetables for about 40 - 50 minutes, until vegetables are tender.
2. Stir in cream of chicken and celery soup, mix well.
3. Add ½ lb of Velveeta cheese, cut up. Heat and stir until cheese is melted. DO NOT BOIL! Add Seasonings to taste.
