Soup - Broccoli Cheese

3 Tbsp butter
3 Tbsp chopped onion
3 Tbsp flour
1 (14.5oz) chicken broth
1 cup milk
1/2 lb (8oz) Velveeta; cut into 1/2" cubes
1 pkg (10oz) frozen chopped broccoli, thawed, drained
1. Melt butter in saucepan on medium-high heat. Add onions; cook 3-5 minutes or until crisp tender, stirring frequently.
2. Whisk in flour until blended.
3. Add broth and milk; cook on medium heat 2 minutes or until heated through, stirring frequently.
4. Add Velveeta and broccoli; cook and stir 5 minutes or until cheese is melted and broccoli is heated through.
