Sides - Onion Rings Skinny

3 onions, sliced 1/2" thick
1 cup all-purpose flour
1/2 tsp salt
1/2 tsp black pepper
1 whole egg, beaten
1 egg yolk
2 cups buttermilk
1 tsp sugar
1 tsp meat tenderizer
1 cup powdered coffee creamer
1. Heat a deep-fryer to 375 degrees F.
2. Place the flour in a shallow baking pan, and stir in the salt and pepper.
3. In a medium bowl, whisk together all of the other ingredients (except onions) until frothy.
4. Dip the onion rings in the wet ingredients then into the flour mixture until coated. Then dip in the wet mixture again, and then into the flour again.
5. Fry onion rings in the hot oil until golden brown. Drain on paper towels, and serve immediately.
