Creamy Scalloped Potatoes

7 tsp butter or margarine, divided
2 Tbsp all-purpose flour
½ tsp salt
½ tsp pepper
1½ cups milk
2 cups sliced peeled potatoes
2 Tbsp finely chopped onion
1. In a saucepan over medium heat, melt 6 tsp of butter. Stir in flour, salt & pepper until smooth. Gradually add milk.
2. Bring to a boil; cook & stir for 2 minutes or until thickened & bubbly. Place half of the potatoes in a greased 2 cup baking dish; top with the onion and half of the sauce. Layer with remaining potatoes and sauce. Dot with remaining butter.
3. Cover & bake at 350 degrees for 30 minutes. Uncover & bake 30-40 minutes longer or until potatoes are tender.
