Grilled Cheesy Potatoes

4 bacon slices, cooked crisp
3 large baking potatoes
1 large onion, sliced
1 cup Velveeta cheese, cubed
½ tsp salt
½ tsp black pepper
2 Tbsp butter or margarine
1 Tbsp bacon drippings


1. Fry the bacon until crisp, reserving 1 tbsp of the drippings. Drain the bacon on a paper towel and crumble when cool; set aside.
2. Peel and slice the potatoes, placing the slices on a 9” x 13” double layer of aluminum foil as you go.
3. Separate the onion into rings, and layer them over the potato slices. Top with crumbled bacon bits, cubed cheese, salt, pepper and the reserved bacon drippings over the top of mixture.
4. Wrap the foil loosely around the potatoes, making sure the ends are sealed well. Cook on the grill about 4” from hot coals for about an hour, or until tender.
***Not as high or long on gas grill***
5. Turn foil packet often to keep the potatoes from burning. Serve Warm.
