3-4 lbs pork baby back ribs
small amount yellow mustard
sweet baby rays
3/4 cup water
3/4 cup apple cider vinegar
2 cups brown sugar
10 1/8" slices of butter
1 Tbsp pure maple syrup
***SPICE RUB***
kosher salt to taste
black pepper to taste
1/2 cup brown sugar
1 tsp onion powder
2 tsp chili powder
2 tsp paprika, sweet or smoked
1/2 tsp cayenne pepper
1 tsp garlic powder
1. Preheat grill to 250 degrees on non direct heat side. Place small pan of water and soaked wood chip foil pouches on direct heat side.
2. Mix all dry rub ingredients (NOT BBQ sauce) in a bowl.
3. Remove membrane from back side of ribs and trim tabs and fat.
4. Rub ribs with a thin coating of yellow mustard, covering all sides. Generously apply dry rub and spread on all sides.
5. Place ribs on indirect heat side of grill meat side up. Every 45 minutes turn ribs 180 degrees, rotate the slabs and spritz with water apple cider vinegar combo. Due this for 3 hours.
6. On foil per slab, spread 1 cup of brown sugar out about the size of rib slab. Place butter slices on top and drizzle with syrup. Take ribs from grill and place meat side down on sugar bed and wrap with foil. Flip meat side up and wrap with a 2nd sheet of foil.
7. Put back on grill, meat side up for another 1 hour. Rotate 180 degrees and cook for 30-40 minutes longer, depending how tender you want.
8. Remove ribs from foil and put on grill, meat side up and cover with Sweet Baby Rays for 30-45 minutes.
