Chicken And Sour Cream Enchiladas

2 cups chicken, cooked & chopped
1 ¼ cup sour cream, divided
1 ½ cup cheese, shredded & divided
1 (16 oz) jar medium heat salsa, divided
2 Tbsp cilantro, chopped
1 tsp ground cumin
10 flour tortillas (6in)
1 cup lettuce, shredded
1 med. Tomato, chopped


1. Heat oven to 350 degrees. Combine chicken, 1 cup each sour cream and cheese, ¼ cup of salsa, cilantro and cumin. Spoon about ¼ cup chicken mixture down center of each tortilla, roll up.
2. Place seam-sides down into a 13x9 inch baking dish, top with remaining salsa. Cover and bake 30 minutes.
3. Sprinkle with remaining cheese and bake 5 more minutes or until melted. Top with lettuce, tomatoes and remaining sour cream.
