Category: Brownies, Candies, Cookies & Fudge
Prep Time:       Cook Time:       Total Time:

8 large red apples
8 wooden skewers
3 cups sugar
½ cup light corn syrup
½ cup water
1 tsp cinnamon extract
1 tsp red food coloring

1. Wash and dry apples; insert skewers in stem ends.
2. Combine sugar, corn syrup, and water in a deep heavy saucepan. Bring to boil over medium heat, stirring constantly. Cook without stirring until candy thermometer registers 285 degrees (soft crack stage).
3. Remove from heat; add cinnamon extract and coloring; stir only enough to mix. Let mixture settle for a few minutes.
Hold each apple by the skewer end; quickly twirl in syrup, tilting pan to cover apple with syrup. Allow excess to drip off; place on lightly buttered cookie sheet to cool. Store in cool.
