2 Tbsp butter
1 large egg
1 cup pure cane syrup
2 cups all-purpose flour
1 tsp baking soda
1 cup boiling water
1 cup pecan halves
Whipped cream


1. Preheat oven to 350 degrees.
2. Put the butter into a baking pan. Put the pan in the oven just long enough to melt the butter. Remove the pan from the oven and tilt the pan to spread the butter evenly. Set aside.
3. Beat the egg in a large mixing bowl. Add the syrup and the flour, and mix well to blend. Add the baking soda to the boiling water, and then add the mixture to the syrup-flour mixture. Be careful when adding the baking soda-boiling water mixture as it will bubble. Pour the batter into the prepared pan; cover the top of the batter with pecan halves; and bake until a cake tester comes out clean, about 20 minutes.
4. Serve warm with whipped cream.
