8 oz sharp cheddar cheese, shredded (2 cups)
½ cup butter
1½ cups all-purpose flour
¼ - ½ tsp salt
¼ tsp ground red pepper
1. In a large mixing bowl, combine shredded cheese and butter; bring to room temperature (let stand about 1 hour).
2. Beat with an electric mixer until well mixed. Stir in flour, salt and red pepper.
3. Divide dough in half. Shape into two 7” logs. Wrap and refrigerate logs for at least 1 hour.
4. With a knife or crinkle cutter, slice cheese logs into ¼ inch thick slices. Place slices on ungreased baking sheet.
5. Bake in a 350 degree oven for 15 minutes.
