Upside Down Cake in a Cup

I wanted an upside down cake...but wanted something different. I went searching...and found a very basic upside down cake recipe that I had the genius idea to make into single servings. By using 6 large ramekins, I created a monster! Give it a try!

INGREDIENTS:

1 1/3 Cup All-Purpose Flour
2/3 Cup Sugar
2 Tsp Baking Powder
2/3 Cup Milk
1/4 Cup + 2 TBL Butter or Margarine, softened
1 Egg
1 Tsp Vanilla
1 Can Sliced Pineapple
1 Jar Cherries, whole, pitted
2 TBL Brown Sugar
Pineapple Juice from Canned Pineapple

DIRECTIONS:

1. In a bowl combine flour, sugar and baking powder.
2. Add milk, margarine or butter, egg and vanilla.
3. Beat with an electric mixer on low speed until combined.
4. Beat on medium speed for 1 minute.
5. Grease each ramekin with butter or margarine all the way around and on the bottom.
6. Add 1 pineapple slice to the bottom of greased ramekin.
7. Add 1 cherry to the middle of each pineapple slice.
8. Pour enough batter to fill each ramekin 3/4 full.
9. Bake in 350 degree oven for 25 to 30 minutes or until a toothpick comes out clean.
10. While cakes are cooking, put 2 TBL butter or margarine, 2 TBL brown sugar and juice from pineapple can in a small pot. Cook until sugar and butter are dissolved and well blended.
11. When cake is done cooking, run a knife around the outside of the cake and flip them over onto a plate.
12. Pour pineapple juice mixture over each cake.
13. Serve Proudly!!!
