This recipe was inspired by the delicious antipasto salad dressing at Buca Di Beppo, and is also reminiscent of my youth at Buddy's Pizza in Detroit. It was developed over many hundreds of trials and in my opinion is better than either of those places. Perhaps the worst thing about this recipe is that the salt content is very high, but it is just too perfect to leave out.
INGREDIENTS:
1 Tbsp. White Balsamic Vinegar
1 Tbsp. Red Wine Vinegar
1 Tbsp. Apple Cider Vinegar
2 Tbsp. Lemon Juice
1/4 tsp. Dry Mustard
1 1/2 tsp. Pink Salt
1 dash Italian Seasoning
1/2 tsp. Finely Ground Black Pepper
8 Tbsp. Vegetable Oil
2 Tbsp. Chopped Red Onions
DIRECTIONS:
1. Blend all ingredients except the oil and onions in Blender/Food Processor
2. Next slowly add the oil, blending it all together thoroughly.
3. Then add half the onions and again blend.
4. Finally the last of the onions are chopped finely and whisked in.
5. Let stand 2-3 hours - Do Not Refrigerate
