Pie Maker Blackberry Croissant

1 cup heavy cream
3 large eggs
1/3 cup granulated sugar
pinch of kosher salt
1/2 teaspoon fresh lemon juice
1/2 teaspoon vanilla extract
3/4 cup fresh or frozen blackberries (or any kind of
berries)
3 day old croissants, cut into 1/2 inch pieces
Whipped cream



1. In a bowl, combine all ingredients, except croissants and whipped cream; mix well.

2. Lay a foil strip over each pie mold to aid with removal once baked.

3. Fill each pie mold with croissant pieces until 3/4 full.

4. Pour the cream mixture into each pie mold until it reaches the top of the croissants; close and latch the lid.

5. Plug in the pie maker and bake for 15-20 minutes or until set.

6. When baking is complete, lift bread pudding by the foil strips to remove from the pie maker.

7. Top with whipped cream before serving.
