Baker's Fish House Onion Ring Batter

"This is the original recipe for the onion ring batter at Baker's Fish House in Wagoner, Oklahoma. Their onion rings are famous in the region! My cousin worked there. She gave me the recipe because I was so addicted to their onion rings. I think they use this same batter on their fried shrimp too. You will love it!"

Servings: easily feeds 6

Ingredients

12 Eggs - beaten
1 Gal. Butter Milk
1/2 Cup Sugar
1/2 Cup Meat tenderizer (Accent)
2 bags powdered coffee creamer (same size as the flour bags)
2 bags All Purpose Flour
1/2 Cup Egg yellow

Directions

1. Heat, deep-fryer to 375 degrees F (190 degrees C).
2. Place the flour in a shallow baking pan, and stir in 1 teaspoon of salt and 1 teaspoon of pepper.
3. In a medium bowl, whisk together all of the other ingredients until frothy.
4. Dip the onion rings in the wet ingredients then into the flour mixture until coated. Then dip in the egg white mixture again, and then into the flour again.
5. Fry onion rings in the hot oil until golden brown. Drain on paper towels, and serve immediately.
