1-1/4 cups canola oil
1/3 cup plus 1 tablespoon red wine vinegar
2 eggs, pasteurized
1 tsp garlic, crushed
1/4 teaspoon salt
1/4 teaspoon ground black pepper

In a blender, whip eggs on low speed until well beaten. Add garlic and half of the red wine vinegar. Whip until well mixed. With the blender on, slowly add half of the oil in a thin stream. Alternate adding the rest of the vinegar and the rest of the oil. Add salt and pepper, adjust to taste.

Makes 2 cups
