KUMBLA (pronounced coomla) (Norwegian Potato Balls)

5 lbs. potatoes, peeled & grated
4 garlic, cloves, chopped
1 cup cubed salt pork (or ham)
4 tsp. salt or Back Eddy's Seasoning
enough flour to make balls approx 4 cups

Boil salt pork in large pot of water until well rendered, keep water. Take salt pork out and chop into cubes. I also usually have some ham juice in my freezer to add to the salt pork brine. Fill two large dutch ovens with liquid.

Mix potatoes, garlic, salt and flour together (you do not need any liquid as the potatoes will make their own liquid) until you can make balls in your hand.

The usual way to make balls is to place a piece of meat in the center of each and then place in liquid to boil. But we have found that adding garlic (grated) and all the salt pork or ham to the balls before boiling will give them a real good flavour.

Mix all ingredients together, make nice size balls and boil in liquid for about 1 hour (or until balls start rising to top). Cut one up and put butter on it and enjoy. My husband likes to add garlic pepper.
