Cherry Almond Fudge

Prep Time 30 minutes - chill overnight
5 cups powder sugar
3/4 cup Whole Milk
24 ounces white chocolate melting discs (wilton)
1 1/4 cups dried tart cherries
1 1/2 cips sliced toasted almonds
1 Teaspoon Almond Extract
Directions:
Line a 13x9 baking pan with parchmen paper so it is over the edges of the pan
In a medium saucepan combine powder sugar ,milk & butter. cook over medium heat until mixture boils and sugar dissolves stirring until its smooth.
reduce heat to low and boil gently for a full 5 minutes
Keeping on low heat Add white chocolate discs stir until smooth.
Remove from heat and add the cherries & almonds, and almond extract blend well
Pour into prepared pan spread out with wodden spoon. cover fudge wit plastic wrap and chill until cold and firm 6 hours or overnight. makes 4 pounds ( 128 pieces )
