Lemon-Honey Chicken Breast

Ingredients

2 large chicken breast halves, boneless, skinless, cut in half lengthwise
Pinch each of salt and pepper
1/2 cup plain Greek yogurt
1/2 cup lemon curd
1/2 cup low-sodium chicken stock
Zest of 1 lemon, about 1 tablespoon
1 teaspoon minced garlic
1/2 teaspoon dried thyme leaves
1/2 teaspoon Mrs. Dash Onion & Herb seasoning
Pinch of dried crushed red pepper flakes
1/4 teaspoon lemon pepper
2 tablespoons honey

Directions

Preheat oven to 350°F.
Spray baking dish with non-stick cooking spray.
Place chicken breasts in dish. Season with salt and pepper.
Mix the rest of the ingredients together, EXCEPT HONEY, with a wire whisk and pour over chicken. Cover with foil.
**If you choose to marinate first, let it sit out on the counter after marinating in the fridge, so that it's not so cold when you put it in the oven. Then pour some of the marinade off, leaving just enough to come up the chicken pieces half way. Discard the rest of the marinade. Re-cover with the foil. Place in preheated 350°F oven and bake 60 minutes. Then remove foil, drizzle honey over chicken, and bake uncovered an additional 30 minutes.

**NOTE: If you want a richer flavor, place raw chicken that's been treated with the sauce, in the fridge for a couple hours before baking. Let set on the counter for 1/2 hour before putting it in the oven to warm up a bit first.
