- 1 1/2 tablespoon vegetable oil
- 4 pork chops or veal chops
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 1/2 tablespoon unbleached flour
- 4 small onions, thinly sliced
- 1/2 cup beer
- 1/2 cup beef broth
- 1 teaspoon cornstarch
- 1/4 cup cold water
Heat the oil in a large skillet over medium-high heat. Season the pork chops with salt and pepper and sprinkle both sides with the flour. Place the pork chops in the skillet and cook for 3 minutes per side. Add the onions to the skillet and cook for 5 minutes, turning the pork chops halfway through the cooking time. Add the beer and beef broth to the skillet. Stir gently then cover the skillet and reduce the heat to a simmer. Let cook for 15 minutes or until the pork is cooked through. Remove the pork chops to a warmed serving platter. Season the sauce in the skillet with additional salt and pepper if needed. Combine the cornstarch and water until smooth. Stir into the sauce in the skillet and increase the heat to medium. Cook, stirring constantly, until the sauce is thickened. Pour the sauce over the pork chops and serve immediately.
