Parmesan Crusted Potatoes

Ingredients:
4 - 6 Medium Yukon Gold Potatoes (Sliced quarter inch thick)
4 Tsp Cornstarch (divided in 2)
1 Tsp Salt
1 Tsp Pepper
1 TB Olive oil
6 - 8 OZ Parmesan Cheese
Directions:
Preheat oven to 500°
Mix cornstarch,salt, and pepper
Toss potatoes in a bowl with cornstarch mixture to coat
Add olive oil and toss to coat
Coat a baking sheet with olive oil or vegetable spray (or line with non-stick foil - still might want to coat)
Arrange potatoes on baking sheet and place in oven for 20 minutes
Meanwhile place parmesan cheese and remaining 2 tsp of cornstarch in food processor
Process about 30 seconds until finely grated
After 20 minutes remove potatoes from oven and liberally sprinkle cheese over potatoes. The excess cheese
will surround the potatoes on the sheet and this is what you want.
Press the cheese down on each potato with back of a spoon and the turn them over cheese-side down
Place sheet pan back in oven for about 5 - 7 minutes or until cheese is a nice golden brown
Remove and enjoy
