Coq au Sherry

Ingredients:
4 Carrots cut into 1" pieces on the bias (diagonal cuts)
3 small Onions with root intact, quartered
1 whole Chicken cut up
2 cups seasoned flour
(I use: tsp each of garlic powder, poultry seasoning, celery salt, salt, coriander, and onion powder)
1/4 cup Olive oil
2 cups Chicken Stock
1 cup Cream Sherry wine
2 TB Oyster sauce (optional)
Directions:
Preheat oven to 350°
In a 12" oven proof pan heat oil over medium heat
Dredge chicken in flour and pat off excess
Brown chicken on both sides and remove to paper towels
Pour off most of oil and saute onion quarters until starting to color (about 5 minutes)
if using oyster sauce add to onions and cook about a minute, stirring
add sherry and cook until slightly reduced (about 2 minutes)
add chicken stock and carrots
place pan in oven and cook for 15 minutes uncovered
remove from oven and place chicken on vegetables
return to oven and cook uncovered until carrots are tender (about 30 minutes)

Serve with white rice
