Pasta Carbonara - New

1 Egg
4 Egg Yolks
1/2 Cup Heavy Cream
8 oz Grated Fontinella Cheese (Stella Brand)
Whisk together eggs and cream
Stir in grated cheese
Set aside

3 Servings Spaghetti (1/2 lb ?)
Prepare Pasta

While pasta cooks:
2 TB Olive Oil
1 Diced Onion
6 - 8 Slices Natural Juice Sliced boneless Ham (don't use "water added" ham)
1/4 Cup Dry White Wine (Chardonay)

Cut Ham into 1" x 1/4" strips and heat in oil
(Usually cut slices in half length wise and then strips)
Add onion and saute until soft and ham slightly browned
Add Wine and deglaze until reduced

Drain pasta reserving 1/4 cup cooking water
Toss spaghetti into ham/onion mixture to coat
Remove from heat and quickly add eg mixture
Stir quickly untill sauce cooks and thickens
Add reserved water if necessary
