Skillet Chicken Pealla

Serves 6
1 1/4 lb. chicken, boneless breasts
1 teas. olive oil
1 med. onion, chopped
2 cloves garlic, minced
2 1/4 c. chicken broth
1 c. uncooked long grain rice
2 teas. dried oregano, crushed
1/2 teas. paprika
1/2 teas. salt
1/4 teas. black pepper
1/8 teas. ground saffron or tumeric
1 can (14 1/2 oz. stewed tomatoes
1 med. sweet red pepper
3/4 c frozen peas
Cut chicken into bite size pieces. In 10 inch skillet cook chidken strips.for 2-3 minutes or until no longer pink. Remove chicken from skillet.
Add onion and garlic to skillet, cook until tender but not brown. Remove from heat. Add broth, uncooked rive, oregano, papricka, salt, black pepper and saffron. Bring to boiling. Simmer covered about 15 minutes.
Coarsely chop steamed tomatoes and add with their juices to the pan. Add sweet red pepper (cut into strips) and frozen peas.
Cover and simmer about 5 minutes more until rice is tender.
Stir in cooked chicken. Cook and stir about another minute or until heated thoroughly.
Optional: add hot sausage and/or cooked shrimp.
