Mixed Berry Tart

Serves 8

Shortbread Crusr
3/4 cup butter, at room temperature
13 cup confectioners sugar
1 1/2 cups flour
1/4 tsp. salt
Blend ingredients until a soft dough forms. Pat into a 9 or 10-inch tart pan (sprayed with non-stick cooking spray. Bake at 350 for 15 to 20 minutes. Let cool.

Lemon Filling
5 oz. cream cheese, room temperature
1/2 cup white sugar
2 large eggs
1/2 cup fresh lemon juice (2 large lemons)
1 Tbsp. lemon zest
2 cups mixed berries
Cream cheese in mixer until smooth. Add sugar, eggs, lemon juice and zest, one at a time until blended and smooth. Pour into tart shell and bake at 350 for 25 minutes. Remove from oven; cool in fridge for 1 hour. Tip with berries.

Refrigerate any leftovers.
