No Peel Potato Casserole

Makes approximately 8 servings

1 cup hot water
1 pkg. dry
8 onion soup mix
8 medium potatoes, not peeled and cut into i/2" square pieces
1 stick butter, melted
1/4 teas. black pepper
1 teas. parsley flakes

Combine water, soup, butter and pepper.
Mix well.
Add potatoes. Mix well and pour into well greased 2-quart covered casserole.
Bake at 350o oven for about 2 hours or until potatoes are well done. Stir occasionally. Uncover for final 1/2 hour
Sprinkle with parsley flakes and stir before serving.
