Quiche (also Faux Quiche)

3 eggs
1cup milk
1/2 cup of Bisquick
1/4 to 1/2 stick of melted butter
dash of pepper
dash of nutmeg
3 oz. of ham, shrimp or crab (or whatever you're up for)
1 cup of grated swiss or cheddar cheese
1/4 to 1/2 cup of grated Parmesan cheese
small green pepper chopped
small onion chopped

Combine eggs, milk, bisquick, butter, nutmeg and pepper in a blender for about one minute. Fold in remaining ingredients.

Bake in greased 9" pie plate at 350 degrees for 35 - 45 minutes.

10" pie plate for 30 - 35 minutes.

Eric's Notes:

A teaspoon of dried onions works well and avoids the dicing fuss. You can omit the onion all together depending on your likes.

I've since added a diced Roma or Plum tomato. They are small and meaty and add color to the quiche. A regular tomato may add too much juice, which could affect how the Bisquick sets up. I usually bake the quiche for 45 minutes, which makes it nice and brown.

I've also used diced pre-cooked bacon for the meat and even Lebanon Bologna for a smoky flavor. Sun dried tomatoes work well as do mushrooms and whatever you are up for.
