***Sauce ***
- 2 ounces butter
- 3 ounces flour
- 3/4 cup cream
- 1/4 cup milk
- 1/2 cup grated Swiss cheese
- salt and white pepper to taste
***Sandwich***
- 1 slice toasted white bread
- 3 ounces turkey breast, roasted, sliced
- 2 slices tomato
- 2 slices bacon, cooked and drained
Preheat the oven to 400 degrees F. Melt the butter in a saucepan over medium heat. Whisk in the flour until smooth and let cook, stirring constantly, for 5 minutes. Whisk in the cream and milk and heat through. Stir in the cheese and cook, stirring, until the cheese is melted and the sauce is very thick. Season to taste with the salt and white pepper. Cut the toast in half. Place the toast in an oven-safe dish. Top with the turkey and tomatoes. Ladle the sauce over the tomatoes. Place in the oven and bake at 400 degrees F for 10 minutes. Serve hot, topped with the bacon slices.
