Mango Cilantro Slaw

3 tbls white wine vinegar
2 tbls oil
3 tbls honey or more if you want it sweeter
2 tbls real mayonnaise
1/2 teas salt
1/2 teas pepper
1 pkg 10oz angel hair cole slaw
3 green onions, choppped
1 firm mango peeled and cut into 1/2 inch pieces*
1/3 cup chopped cilantro leaves.
In bowl, whisk together first 6 ingredients. Add the remaining and toss well to combine. Makes about 4 cups.

Mangos are easy to cut.
A mango has one long, flat seed in the center of the fruit.
Always wash the mango before cutting.
For Dices:
Stand the mango on your cutting board stem end down and hold. There will be a bump near the top called the eye. Place your knife about 1/4 inch from the eye and cut down through the mango. Flip the mango around and repeat this cut on the other side. The resulting ovals of mango flesh are known as the cheeks. What is left in the middle is mostly the mango seed. You can still cut some mango flesh from the seed.
Cut parallel slices into the mango flesh, being careful not to cut through the skin. Turn the mango cheek 1/4 rotation and cut another set of parallel slices to make a checkerboard pattern.
Here is where you can choose your favorite method. Either Slice and scoop the mango slices out of the mango skin using a large spoon or Inside Out turn the scored mango cheek inside out by pushing the skin up from underneath, and scrape the mango chunks off of the skin with a knife or spoon.
For Slices:
Slice each side just past the seed.
Slice flesh without breaking the skin.
