Southwestern Corn Relish

Ingredients

1 can (12 ounces) niblets corn kernels, rinsed and drained
1/2 cup chopped red onion
1 small green bell pepper, chopped
3 tablespoons red wine vinegar
2 tablespoons olive oil
1 teaspoon sugar
1/4 teaspoon salt
1/4 teaspoon cumin
1/4 teaspoon ground black pepper

Directions
In medium bowl, combine corn, onion, and bell pepper. In small bowl, whisk together remaining ingredients.
Pour dressing over vegetables; toss to coat.
