Cream Cheese cheesecake

Cheesecake

1 cup Graham Cracker Crumbs
3 tablespoons Sugar
3 tablespoons butter, Melted
24 oz Cream Cheese, Softened
3/4 cup Sugar
3 each Large Eggs
1 teaspoon Vanilla
21 oz Pie Filling (1 can) Cherry, Blueberry, etc

Combine crumbs and butter; press onto bottom of 9-inch spring
form pan. Bake at 325 degrees F., 10 minutes.

Combine cream cheese and sugar, mixing at medium speed on electric
mixer until well blended.Do not overbeat cream cheese

Add eggs, one at a time mixing well after each addition. Blend in
vanilla; pour over crust. * see note

Bake at 450 degrees F., 10 minutes. Reduce oven temperature to 250
degrees F., continue baking 25 to 30 minutes or until set.

Loosen cake from rim of pan; cool before removing rim of pan.
Chill.

Top with pie filling just before serving.

Makes 1 Cake

Note ( Sometimes when I am baking a custard type dessert, I sit the pan into another cake pan and then sit both of them in a pan filled with a little water. The extra pan keeps any water from seeping into the spring form pan.
Place springform pan in another cake pan and then both in a larger pan like a roasting oan.
Place roasting pan on oven rack making sure there is at least 1 inch between the pan the springform pan is sitting in and the edge of the roasting pan. Carefully pour enough hot tap water into roasting pan to come halfway up side of the pan springform pan is sitting in. Sue)
