Bacon Quiche

1 sheet refrigerated pie crust
1/4 cup sliced green onions
1 tablespoon butter
6 eggs
1-1/2 cups heavy whipping cream
1/4 cup unsweetened apple juice
1 pound sliced bacon, cooked and crumbled
1/8 teaspoon salt
1/8 teaspoon pepper
2 cups (8 ounces) shredded Swiss cheese
Directions
Line a 9 in. pie plate with pastry; trim and flute edges. Set aside.
In a small skillet, saute green onions in butter until tender.
In a large bowl, whisk the eggs, cream and juice. Stir in the bacon, salt, pepper and green onions. Pour into pastry; sprinkle with cheese.
Bake at 350 for 40 45 minutes or until a knife inserted near the center comes out clean. Let stand for 10 minutes before cutting.
Yield: 6 servings.

try blind baking (partially baking)your pie crust before you fill it and place the pie pan in a water bath before baking.
Blind baking is baking an unfilled pie shell to produce a partially baked crust. Blind baking the crust prevents the crust from becoming soggy from custard based fillings, .
To blind bake a crust, once your crust is prepared and placed in your pie pan, prick a few holes (this is called "docking") or fill it with pie weights* (do one or the other, if you fill it with weights, you don't need to dock), (Line the pie with parchment paper and use a couple cups of dry beans if you do not have weights.*)
and bake for several minutes let cool slightly and add filling and then bake until done..knife inserted near the center comes out clean
I always use beans but you can buy weights.
