2 pounds flounder fillets, fresh
1 cup cornmeal
1/2 tsp. salt
1/2 tsp. paprika
1/2 tsp. ground black pepper
buttermilk
Skin fillets and cut them into serving size portions.
Combine cornmeal with seasonings. Dip fish in buttermilk and then roll in the cornmeal mixture.
Place flounder in an iron skillet that has been preheated with
about 1/8 inch of oil.
Brown on one side 2 - 3 minutes. Carefully turn and cook on the
other side an additional 3 minutes, until fish flakes easily with a
fork.
Tarter Sauce
3/4 cup mayonnaise
2 Tablespoons Dill Relish
1 Tablespoon dried parsley
1/2 Tablespoon lemon juice
1/2 teaspoon dried onion flakes
1/4 teaspoon Worcestershire sauce
Mix well. Place in fridge at least 2 hours to allow flavors to blend and develop.
Makes 1 cup
