Lotawata Creek Southern Grill Warm Bacon Dressing

Yield: 2 cups

1/4 cup bacon grease (see variation)

1 cup finely diced yellow onion

2 ounces uncooked bacon, ground or finely minced

1 teaspoon dry mustard

1/2 cup white vinegar

1/2 cup apple cider vinegar

1/2 cup granulated sugar

1/4 cup packed brown sugar

1/2 teaspoon coarsely ground black pepper

1/3 teaspoon salt

1 pinch garlic powder

4 teaspoons vegetable oil

2 tablespoons plus 1 teaspoon cornstarch

2 tablespoons cold water

1. In a large skillet, melt bacon grease over medium heat. Add onion and cook slowly until tender and translucent. Add bacon and dry mustard; cook until bacon is crispy.

2. While bacon cooks, stir together vinegars, sugars, pepper, salt, garlic powder and oil in a medium bowl, and stir together cornstarch and water in a small bowl.

3. When bacon is crispy, pour vinegar mixture into skillet and whisk well to incorporate. Cook, stirring continuously, until mixture bubbles and begins to thicken. Stir in cornstarch mixture, stirring continuously, until dressing thickens, then cook at least 1 minute more.

4. Serve warm. (Dressing can be made ahead of time and reheated.)


Variation: If you don’t have bacon grease on hand, grind or finely mince about 1/4 pound uncooked bacon; then cook the bacon and chopped onion together.
