Frazer's Traveling Brown Bag - Key Lime Pie
Category: Copy Cat Recipes (I have not tried all of these recipes)
Yield: 6 servings.
1 1/3 cups graham-cracker crumbs>
1/2 cup (1 stick) butter, melted>
3 egg yolks>
1/2 cup Key lime juice (see note)>
1 (14-ounce) can sweetened condensed >milk>
1 1/4 cups heavy cream>
2 teaspoons granulated sugar>
1/4 teaspoon vanilla>
Lime slices, for garnish>
Preheat oven to 350 degrees. Stir together crumbs and butter. With the back of a spoon, press crumbs into bottom and up sides of a 9-inch pie pan to form a smooth, even shell.
In a large stainless steel or glass bowl, thoroughly mix yolks with lime juice and sweetened condensed milk. Pour mixture into pie shell; bake until custard is just set, 17 to 20 minutes. Let cool, then refrigerate until ready to serve.
In a chilled bowl, beat cream until soft peaks form. Add sugar and vanilla; continue beating to stiff peaks. Just before serving, spoon whipped cream mixture onto chilled pie and spread from the center out. Garnish each piece with a lime slice.
Note: Bottled Key lime juice is available in most supermarkets. Because it has >a short shelf life after opening, the remainder can be frozen for later use.>
