Greek Salad Dressing

Category: Copy Cat Recipes (I have not tried all of these recipes)

Yield: 1 1/2 cups

1/2 cup red wine vinegar

2 cloves garlic, peeled, or 1 teaspoon garlic powder

2 teaspoons dried oregano (preferably Greek)

1/4 cup plain dry bread crumbs (see note)

2 ounces feta cheese (preferably Greek)

1 teaspoon salt

1/2 teaspoon ground black pepper

1/3 cup corn oil (see note)

2/3 cup olive oil (preferably Greek)

1. In a blender or food processor, combine vinegar, garlic, oregano, bread crumbs, feta, salt and pepper; blend until smooth. With the motor running, slowly pour in the oils, until dressing is light and airy.

2. Cover and refrigerate for at least 24 hours before serving.


Notes: Bread crumbs help stabilize the dressing so it doesn't separate. A blend of oils is preferred because using only olive oil produces a dressing that's thick like mayonnaise.
