1 14oz low sodium chicken broth
1/3 cup dry sherry..(not cooking sherry)
1 tablespoon unsalted butter
2 teaspoons grated peeled fresh ginger
1/4 teaspoon salt
2 green onions, thinly sliced
1 fresh mango cut into 1/2 in pieces
In a saucepan add broth, sherry, butter,ginger and salt.
Heat to boiling over medium heat.
Stir in rice.
Cover and cook 20 min
Remove from heat and fluff rice with a fork.
Cover and let stand 10 min
Add onions and mango and toss to serve.
