1 15 oz can black beans drained and rinsed
1 cup corn
2 tablespoon chopped fresh cliantro leaves
2 teaspoons chili powder
1 can refried beans with green chilis
3 cups baby spinach leaves (about 3 oz)
2 cups shredded pepperjack cheese
3 tablespoons oil, divided

In bowl, stir together black beans, corn, cilantro, and chili powder
Place 2 tortillas on work surface and spread 1/3 cup of refried beans on each tortilla leaving a 1/4 border around edge. Over half of the tortilla, spead 1/2 cup spinach 1/3 cup cheese and about 1/3 cup corn mixture. Fold totilla to cover corn mixture and press lightly

In a non stick skillet, heat 1 tablespoon oil
over med heat. Place 2 quesadillas in skillet and cook 4 to 6 min or until golden brown on the outside and cheese is melted.
turning once halfway through cooking.

Repeat by wiping the skillet clean between batches with a papaer towel and adding another tablespoon of oil and cooking two at a time.
Makes 6

Cut into wedges and serve.
