Spinach and Feta Cheese Quiche

1 onion , chopped about 1/2 cup
1 tablespoon olive oil
1 tablespoon unsalted butter
1 (10 ounce) package frozen spinach , chopped, well drained and squeezed dry
1 clove garlic minced
1 4-6 oz package feta cheese crumbles
1/4 teaspoon dill
4 large eggs
1 cup half and half
1/2 teaspoon black pepper
1/4 teaspoon salt
1/8 to 1/4 teaspoon nutmeg, according to how much you like nutmeg

1 deep dish pie shell (9-inch)

Directions:
Preheat oven to 375

Heat oil and butter over medium heat and add onion and cook until tender and onion brown.
Add spinach, garlic, and dill and cook about 3 minutes. Remove from heat and stir in feta cheese.
Whisk the eggs lightly and add half and half, pepper, nutmeg, and salt
Spread spinach in pie crust and slowly pour the eggs over spinach.
Bake 40 to 45 minutes or untl center is set and top is golden brown. Remove from oven and cool 15 minutes before cutting into wedges.
