1 pound of asparagus trimmed about 3 cups
1/2 onion, chopped
1 can (14 ounces) low sodium chicken broth
1/4 cup water
1/2 cup half and half
1 1/2 tablespoons flour
1 tablespoon unsalted butter
1 teaspoon hot sauce, optional
1/2 teaspoon pepper (Dierberg's uses white pepper)
1/4 cup grated parmesan cheese

Cut asparagus tips up and place them in a microwave bowl with 1 tablespoon water. Microwave on high for 1 minute. Set aside

Combine the remainging asparagus, onion, broth, and water and bring to a boil. Reduce heat and simmer stirring occansionally until tender. 7 or 8 minutes.

Do not drain. Stir in half and half. Bring to a boil. IN small bowl, combine the butter and the flour and mix to make a paste.
Stir into soup a little at a time until well mixed.
Reduce heat and simmer stirring often until thickened.
Use an immersion blender to puree the soup. or blend in small batches. Return to pan and stir in the reserved asparagus tips, hot sauce, and pepper. Sprinkle with cheese.
