Cabbage Soup (German)

4 Slices Bacon, Thick, Diced
2 Onions, Sliced
1 Turnip, Sliced
2 Carrots, Diced
3 Potatoes, Cubed
1 Head Green Cabbage, shredded
4 c Chicken Stock
2 c Water
6 Sprigs Italian flat leaf Parsley *
1 Bay Leaf



GARNISH:
1/4 c Parmesan Cheese, Grated

Directions:


In a 6-quart saucepan or pot, combine all ingredients except salt, pepper and cheese. Simmer partially covered for 1-1/2 to 2 hours. Discard the parsley and bay leaf bundle; season to taste. Pour into hot soup bowls and garnish with cheese.

*Since I usally do not have the fresh parsley I use the dry parsley most of the time and add when served.

Servings: 6
