St Louis Bread Co. Potato Soup (Copy-cat Recipe)

4 c. low sodium chicken broth
4 c. shredded potatoes
1/4 c. chopped onion
1/4 c. shredded carrots
1 bay leaf
1/2 tsp seasoned salt
1/4 tsp freshly-grnd pepper
1 pkt cream cheese - (8 ounce) cut into chunks

Directions

Combine broth, potatoes, onion, carrots, bay leaf, seasoned salt and pepper. Bring to a boil, then reduce heat and simmer 10 to 15 min.

Remove bay leaf. Reduce heat to low. Stir in cream cheese. Heat, stirring frequently, till cheese melts.
This recipe yields about 8 (1-c.) servings.
