Basic Honey -Bacon Dressing

HONEY-BACON DRESSING:
8 bacon strips, cooked and crumbled
1/2 cup honey
1/2 cup red wine vinegar
1/3 cup oil
1 teaspoon dijon mustard
1 teaspoon lemon juice

Directions

In a small bowl, whisk together dressing ingredients except oil and bacon. Whisk in the oil slowly, pouring oil in a steady stream into bowl or use a blender. Add the bacon and pour over salad.
Serve immediately.

(For a little heat, add a drop of tabasco sauce.)
For a fruity flavor, add 1 tablespoon frozen concentrated orange or pineapple juice.)

Yield: 8-10 servings.
