Yogurt Dill Cucumber Dressing

Category: make your own salad dressings

Dill Cucumber Dressing

3/4 cup plus 2 tablespoons nonfat plain yogurt
3 tablespoons fresh dill, chopped
(if you do not have fresh dill, use 1 tablespoon of dried dill weed, but fresh is better.)
2 teaspoons granulated sugar (or more to taste)
(Or sweetener like Stevia or Splenda, etc., if you use that)
1/8 teaspoon salt
1/8 teaspoon pepper
2 teaspoons lemon juice
1 cup cucumber, peeled and seeded

Peel and seed cucumber and chop into tiny chunks.
In a blender or food processor blend half of the cucumber with all other ingredients. Stir in remaining half cup of cucumber. Chill or serve over green salad
Makes about 2 cups.

(If you do not want the dressing chunky, blend all the cucumbers at one time.)
