Grandma Provance's Cranberry Salad

Category: Side dish

Ingredients:

1 pound fresh cranberries, ground
4 cups chopped apples, chopped bite size
1 cup crushed pineapple, with juice
1 cup chopped celery bite size
3 cups sugar
1 cup chopped pecans
1 package lime jello
1 package lemon jello (I sometimes use 2 orange jello and omit the 1 cup orange juice and use water in jello)
1 cup hot water
1 cup orange juice

Wash and pick through the cranberries, discarding any that do not look fresh.
Grind them if you have a grinder.
(I use the blender. Put the cranberries in the blender and cover them with water. But be careful not to make them mushy by blending too much. They should look as if you had put them through a grinder. Strain water from cranberries.)

Pour the sugar over the cranberries and stir.

Peel and core the apples and chop. You usually need 4 apples to make 4 cups. Add to cranberries.

Wash and chop the celery. Add to the cranberries.

Add the pineapple with juice.


Put the jello in a dish.
Bring the water and orange juice to a boil and pour over the jello and stir until dissolved.
Add to the cranberries.. Stir until all ingredients are well blended.

Refrigerate several hours.
(You can freeze this, too for a later date)

(Every holiday, someone in this family has to bring grandma Provance's cranberries.)
