Chicken-Cheese-Spinach Quiche

Preheat oven to 375f


Ingredients

1 unbaked 9" pie crust
2 tablespoons oil
1/2 teaspoon chopped garlic
1/2 cup chopped onion
1/2 cup cooked crumbled bacon (or real bacon pieces in package)
1 cup cooked chopped chicken
1 box frozen spinach, thawed and squeezed to drain. Chop spinach.
1 8oz sour cream
1/4 teaspoon garlic powder
1/2 teaspoon pepper
1 cup shredded cheddar (If you like it cheesy, add 2 cups)
1 cup shredded asiago cheese (can subsitute parmesan cheese but use less. It is sharper)
3 large eggs
1/2 cup whipping cream

Prick holes in bottom and sides of pie crust with a fork.
Bake 10 minutes and set aside to cool.

In a skillet, heat oil over low heat and add onion and chopped garlic. Cook 2 or 3 minutes, stirring, until onion is tender. (Do not let garlic get brown because it will make it bitter.)
Reduce heat and add the garlic powder,bacon,chicken, amd spinach. Stir to combine.

Pour mixture into a bowl and stir into the spinach mixture sour cream, garlic powder, and pepper until blended. Stir in the cheeses.

In a small bowl, beat the eggs and whipping cream with a fork or wire whisk until well blended. Fold this into the spinach mixture until it is blended.

Pour filling into prebaked pie crust.
Bake for 15 minutes.
Cover the edges of the crust with foil
Bake 20 or 25 more minutes until center is set and crust is brown.
Let stand at least 15 minutes before cutting.

Serves 8
