Sweet Corn and Chicken Soup

Ingredients

1 whole boneless chicken breast, finely chopped
3 cups chicken stock
1 (220g) can of creamed corn (make sure it is a good brand)
1 tablespoon dry sherry
1/4 teaspoon powdered ginger (or have 1/2 teaspoon freshly grated)
1/2 teaspoon sesame oil
1 teaspoon cornstarch blended with 2 tablespoon cold water
1 egg
chopped green onion for garnish

Pour stock into a saucepan
add the chicken to the stock
Simmer until meat is cooked. (Never Boil chicken or it will be tough)
add the corn, sherry, ginger, sesame oil, and simmer five minutes.
add the cornstarch blended with water and
and simmer until slightly thickened
Remove from heat


Stir the soup until it forms a whirlpool and pour in slowly the beaten egg in a steady stream. (the heat will cook the egg strands)

Must be served hot.

(When we ate this at the restaurant in Mitchem Aus, they served it with a little chopped ham along with the green onions as a garnish>
