Rene's Honey Glnger Glazed Carrots
Category: Side dish
Ingredients
1 1/2 pounds carrots or baby carrots
1 tablespoon unsalted butter
1 1/2 tablespoons honey
2 teaspoons of finely minced fresh ginger (or 1 teaspoon ground ginger)
1/4 teaspoon salt
Peel and cut carrots into slices. Cook in water until carrots are tender.
Drain and pat carrots dry with paper towel.
(**# (For orange carrots, see below)
In large skillet, combine butter, honey, ginger and salt. Heat and add the carrots and cook for about 4-5 minutes to glaze.
**# Orange
(If you want some orange honey, ginger carrots,
Mix together
1/4 cup frozen orange juice
1 1/2 teaspoons lemon juice
1 1/2 teaspoons corn starch
Add to the skillet with the butter, honey, ginger and salt
Add carrots and cook for 4-5 minutes until glazed.
