Ingredients

2 cups all purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
2 large eggs beaten
1 1/2 cups granulated sugar
1 (19oz) can of fruit cocktail including the juice. (use good brand)
1 teaspoon vanilla


Sift flour, salt and baking soda together.

Add the granulated sugar ( 1 1/2 cups)

add 2 eggs and the fruit cocktail including the juice. Mix well by hand

Pour into a 9x13 greased baking pan.
Bake 350 for 45 min. (If you are using a glass pan, lower the temperature to 325)

Prick holes in cake with a fork when you remove it from oven. While it is hot pour topping over the cake. (topping recipe below)
Cover and refrigerate overnight.
Cake will be very moist.

Topping:

1/2 cup brown sugar
1 stick unsalted butter
1 cup evaporated milk (such as Pet, Milnot,etc)
1/2 cup coconut
1/2 teaspoon vanilla
1/2 cup chopped nuts


In saucepan, combine the butter,brown sugar, evaporated milk, and 6 tablespoons granulated sugar.
Cook until the mixture comes to a rolling boil and cook for three (3) minutes.
Remove from heat and add the coconut, vanilla, and nuts.
Pour over cake
Cover and refrigerate overnight.
